PDQ (Pretty Darn Quick) Bourguignon

Bonjour! Je me sens français aujourd'hui. Et vous? ⁠

Our Prime Angus Beef Tapa is so versatile, you can even cook fancy French dishes with it! I dubbed this recipe “PDQ (Pretty Darn Quick) Bourguignon,” because that's how long it takes to cook this beef stew. Now you can have this dish in a flash, instead of the usual 3 to 4 hours.⁠

In a large pot with a lid, melt some butter and cook about 150grams of thick cut bacon or lardons (see? Still French!😅). Once crisp, transfer bacon to a paper-lined plate and set aside. In the same pot, add mushrooms and a couple of minced garlic cloves. Set aside. Cook the Prime Angus Beef Tapa for a few seconds per side, then transfer to a plate. Saute some chopped onions, and diced carrots. Once cooked, add tomato paste and cook until tomato paste has roasted. Then add thyme or herbes de Provence, and season with salt and pepper. Sprinkle a couple of tablespoons of flour into the pot and cook until it has toasted slightly. Add a cup of red wine of your choice.⁠

Remember all those ingredients you cooked and set aside? Dump them all back into the pot and add a dozen pearl onions and a cup of hot water and 1/4 of a cube of beef bouillon. Mix until the bouillon cube has dissolved. Bring the pot to a boil then simmer covered for about 10-15 minutes. That’s it!⁠

Serve with mashed potato, slices of crusty bread or buttered pasta. Enjoy!
