TAPA with ONION GRAVY, MASHED POTATO AND CORN

My kids love mashed potatoes and gravy.
They also love buttered corn.
Here is my attempt at making a full meal that the kids will actually enjoy.
First, cook and mash potatoes. You can make it as lumpy or as smooth, and as creamy or buttery as you want. Then, saute corn kernels in melted butter, season lightly with salt and pepper, and set aside.
In a skillet, sear Prime Angus Beef Tapa for a couple of minutes per side.
Transfer to a plate and keep warm.
In the same pan, melt a tablespoon of butter then saute a whole onion that has been sliced or chopped. When tender and caramelized, add a tablespoon of flour. Toast the flour lightly. Whisk in a cup and a half of beef stock (or plain water). Continue whisking until smooth and no more lumps. Season to taste with salt and pepper.
To serve, spoon a heaping portion of mashed potato into a bowl or deep dish. Top with cooked Prime Angus Beef Tapa then pour a ladle-full of onion gravy on and around the tapa and mashed potatoes. Add buttered corn on the side. Serve and enjoy!
