BBQ LOADED BAKED POTATOES

Loaded Baked Potatoes stuffed with shredded BBQ Baby Back Ribs, crisp bacon bits, cheddar and sour cream -- that's our perfect baked potato!
The crisp, flavourful skin that gives way to a soft, fluffy interior. 🤤🤤🤤 Drizzled with melted butter then stuffed with loads of shredded BBQ Baby Back Ribs, crunchy bacon bits, melty cheese and sour cream... yuuuummmm!!!

First, wash and dry whole potatoes. Poke some holes with a fork then rub them all over with some olive oil, salt, pepper and paprika.
Wrap each potato in foil then bake on a baking sheet in a preheated oven at 200C for 25-30 minutes.
Meanwhile, reheat/grill the BBQ Baby Back Ribs according to the reheating instructions. Shred and set aside.
Prepare other toppings:
melted butter,
crispy bacon bits,
grated Cheddar cheese,
sour cream
chopped green onions
When potatoes are done, remove from oven and allow to cool (to the touch) then unwrap each potato. Slice halfway through lengthwise through the center then gently push the ends together to break up the potatoes and create craggly bits where the butter can drip through.
Drizzle melted butter inside each potato, then stuff with shredded BBQ Baby Back Ribs, bacon bits, and cheese. Top with a dollop of sour cream and garnish with chopped green onions. Serve and enjoy!
