PDQ (Pretty Darn Quick) BBQ CARNITAS

I love carnitas, but sometimes I just don't have the time nor patience to slow-cook one from scratch. My alternative is this PDQ version using BBQ baby back ribs.
I just reheat the ribs, shred the meat and use that as filling to my soft tacos.
Add shredded lettuce, onions, cilantro and cheddar cheese.
Served here with my quick blender salsa and corn and cilantro salad (see Angus Tapa Breakfast Burrito post). So good!
