BBQ PULLED PORK WONTON SALAD with ORANGE VINAIGRETTE

Defrost, grill and shred the BBQ Baby Back Ribs and set aside.
For the vinaigrette, mix the following until sugar has dissolved, then store in chiller until ready to use:
2 Tbsp sugar
1/2 tsp sesame oil
2 Tbsp rice vinegar
2 Tbsp orange juice
1/2 tsp salt
a pinch of ground black pepper
For the salad:
Fry up 10-12 wonton wrappers, either sliced or whole, until golden brown and crispy
1 bag of mixed greens
1/2 red bell pepper , sliced into thin strips
1/2 green bell pepper , sliced into thin strips
1 cup fresh green beans (I used haricot vert), blanched and cut into half
1 pc fresh orange, divided into segments
1/2 red onion , sliced thinly
1 cup cucumber slices
chopped spring onions, extra wonton crisps and toasted sesame seeds to garnish
In a bowl, just before serving, mix all salad ingredients together with shredded BBQ Baby Back Ribs, toss in vinaigrette and garnish with spring onions, sesame seeds and extra wonton crisps. Enjoy!
